Job Purpose: Assist the Head Cook with the preparation, cooking and serving of nutritious meals for residents. In the absence of the Head Cook, take responsibility for the day-to-day running of the kitchen while maintaining high standards of food safety, hygiene and quality.    

Duties    
- Prepare, cook and serve meals for residents.
- Take charge of the kitchen when the Head Cook is absent.
- Ensure food is handled, stored, prepared and served safely in line with HACCP procedures.
- Maintain high standards of food hygiene, cleanliness and kitchen safety.
- Complete all required food safety records and documentation.
- Order food and manage stock levels, rotation and storage.
- Check deliveries and ensure supplies are stored safely.
- Plan and adapt menus when required.
- Prepare meals that meet residents' dietary, nutritional and cultural needs, including allergy requirements.
- Manage food allergens and special diets, including soft, puréed and allergen-free meals.
- Arrange equipment maintenance and report repairs.
- Help organise staff rotas and arrange cover where required.
- Respond to complaints professionally.
- Participate in kitchen audits, meetings and training.
- Clean kitchen areas and equipment to the required standard.
- Follow health and safety, food hygiene and infection control procedures at all times.

Essential Skills  
- NVQ/QCF Level 2 in Catering, or willingness to work towards it.
- Willingness to complete mandatory training, including Food Hygiene Level 3.
- Experience working in a commercial kitchen.
- Good written and verbal communication skills.
- Ability to lead and manage a team.
- Awareness of health and safety requirements.
- Good IT skills.
- Good leadership and organisational skills.
- Knowledge of environmental health in a kitchen environment.
- Knowledge of basic food hygiene and HACCP.
- Basic understanding of nutritional and therapeutic diets.
- Good time management skills.
- Ability to maintain accurate records.
- Good interpersonal skills.
- Reliable, committed and calm under pressure.
- Flexible to work a rota including weekends, bank holidays and unsocial hours.
- Satisfactory police check.

Desirable Skills  
- Isle of Man Worker status.
